Summer cafes and restaurants in Ukraine this year will be less, than in the past, writes a weekly journal "Comment". In particular, by estimations of the sales manager of Open Company «Altera of Groups» of Igor Borovskogo, their quantity will decrease for 30 %. To open and contain summer platforms became much more expensive, whereas incomes of them because of outflow of clients are predicted more low, than last year. Under forecasts of analysts, falling of profitableness of cafe and restaurants in the open air in this season will make, in comparison with last year's indicators, 10-15 %. Among major factors of increase of the cost price of services of summer platforms - an import rise in price, increase of municipal tariffs and cost of reception of permissions from local authorities. (For example, in Kiev cost of the permission to month of work of the open area has grown ten times, in comparison with last summer, and makes nearby 4000 grn. The sum of investments of opening of "a summer terrace», considering a lining of all municipal networks, can reach 500-600 thousand грн. The turn of summer platforms in Kiev on the average will make from, approximately, 700–1000 grn./day for small cafe of an average price category to almost 4000–5000 grn./day for expensive restaurant). To involve visitors, victualers are going to pass to cheaper assortment for the menu, selecting domestic alcoholic drinks and products. Besides, under forecasts of experts, this summer the quantity of the open areas which will work without documents considerably will increase. Thus victualers will try to save on acquisition of licences. In capital, according to the director of the company «Restaurant consulting» of Olga Nasonovoj, will illegally work about 50 % of seasonal points of public catering, and in regions this indicator will reach 70-80 %. As a whole, summarise "Comments", about 10-15 % of victualers summer recession of sales will not endure. |
